Power Balls

This recipe is awesome!  They are so easy to make, are high in protein and fiber and the kids LOVE them!  Use gluten free oats and they are gluten free.  Perfect for a snack or a quick breakfast and you don’t even have to bake them.

1 cup gluten free oatmeal

2/3 cup toasted coconut flakes

1/2 cup almond butter

1/2 cup ground flaxseed

1/4 cup dried fruit (or dark chocolate chips)

1/3 cup raw honey

1 tsp vanilla

mix all the ingredients together – you may need to squish everything together with your hands – and roll into bite size balls.  These are great for making a double batch and freezing some for later.
